Try Tom's Rocket Salad from Week 3 of COME DINE WITH ME AUSTRALIA series 2.


  • 200g Goat’s cheese

  • 150g Prosciutto

  • 100g Olives

  • 2 cloves Garlic, crushed

  • 1 red Capsicum, cut into thin strips

  • 1 Yellow Capsicum, cut into think strips

  • 1 red onion

  • 1 punnet Cherry Tomatoes

  • 2 tbls mixed herbs

  • 1 lemon, juiced

  • 3 tbls Olive Oil

  • Pepper and salt to taste


  • 1.

    In a bowl combine rocket with olives, onion, cherry tomatoes and toss

  • 2.

    Lightly dress with ½ of the lemon juice and 1 tbls olive oil

  • 3.

    In a bowl combine goats cheese with mixed herbs, garlic, salt and pepper

  • 4.

    Wrap 1 tbls spoon of mixture with 1 strip of yellow and red capsicum in prosciutto and roll up

  • 5.

    Lightly fry in remaining olive oil for 5 minutes

  • 6.

    Add this to salad, squeeze lemon over the top and serve
