A nice delicious dessert that can be cooking while main coarse is being eaten.

Ingredients

  • 2 cups FC milk

  • 1 cup coconut

  • 1 cup caster sugar

  • 125 g melted butter.

  • 4 lightly beaten eggs

  • 1/2 cup plain flour

  • 2 teaspoon vanilla

Method

  • 1.

    Preheat oven to 180 degrees... grease 23cm pie plate.In a large bowl, using a woodwen spoon.

  • 2.

    Mix all ingredients together. Pour into pie plate (will fill up).

  • 3.

    Bake for 55/60 minutes or until set.

  • 4.

    Serve with custard, cream or ice cream.

Notes

DO NOT MIX too well as the rough mix is what allows the layers to form. I usually make it up, pop in oven while serving out and eating main meal. By the time it's cooked everyone will be ready for dessert.
