Taste the dish as you are making it – you may need to adjust the lemon and salt quantities depending on the strength of the preserved lemons. It makes a lovely starter and canape.


  • 220 g Yellow Tail Fish Fillets trimmed and julienned

  • 1 teaspoon Preserved Lemon Very finely chopped

  • 0.5 tablespoon chive finely chopped

  • 0.5 tablespoon Parsley chopped

  • Salt reduced Soy sauce

  • White pepper

  • 1 teaspoon mirin

  • 0.5 teaspoon Ginger finely grated

  • 2 teaspoons White Sesame Oil or grapeseed oil

  • Baby Shio Leaves and chive to garnish

    Mix all the ingredients together and adjust the seasoning to taste.

    If you can’t find preserved lemon, use lemon zest or lime adjusting the salt content with soy sauce to taste

  • 3.

    Place on serving plates and garnish with chives and shiso
