This quick and easy summery salad of prawns, fennel, avocado, radish and macadamias makes the perfect light lunch or dinner.


  • 1kg cooked king prawns, peeled and deveined, tails on

  • 1 avocado, sliced

  • 1 fennel bulb, finely shaved

  • 3 cups leaves

  • 4 Tbsp fresh mint leave

  • 1 radish, finely sliced

  • ½ cup macadamias, roasted and chopped

  • 30ml lime juice

  • 60ml extra virgin olive oil

  • 1 tsp Dijon mustard

  • 1 tsp maple syrup

  • Sea salt and freshly cracked black pepper


  • 1.

    Whisk together the lime juice, maple syrup, mustard and olive oil

  • 2.

    Arrange the prawns, avocado, radish, fennel, mint and leaves on a plate

  • 3.

    Pour over the salad dressing and gently mix through

  • 4.

    Top with macadamias, season to taste with salt and pepper

  • 5.

    Serve with a wedge of lemon

The method statement uses coriander root. It's also stated as an ingredient.
Neil doesn't use it in his video.
Have you tried to pestle coriander root?

Where are the Prawns in this recipe? It says 8 cooked Kingfish many prawns do you need. I think there has been a mistake in the printing.
