Pad Thai

Ingredients

  • 4 Garlic Cloves

  • 400 g Chickens chopped

  • 200 g baby capers

  • 1 Small Can of Bamboo Shoots

  • 3-4 Chilli chopped

  • 4-5 Apple Eggplant

  • 1 dash basil leaf

  • 2 medium Onions chopped

  • 3 tablespoons Fish sauce

  • 2 tablespoons Oyster sauce

  • 2.5 teaspoons Sugar

  • 2.5 cups cooked fettucini Noodles

Method

  • 1.

    Fry garlic in vegetable oil (in wok) until golden brown.

  • 2.

    Add chopped chicken and onion.

  • 3.

    Stir in baby corns and bamboo shoots.

  • 4.

    Add chillies, sugar, green peppercorns and apple eggplants. Stir in basil, fish sauce and oyster sauce.

  • 5.

    Add cooked fettuccine noodles and stir throug

Notes

Serve immediately and enjoy!

This recipe is so bad, I really hope Neil Perry didn't write it.

Correction to above: I was unable to buy apple eggplant!!

Made this last night and it was yummy!!
However, in the ingredient list there is no mention of green peppercorns or baby corns (these are mentioned in the method). I was unable to buy baby eggplant, so used small lebanese eggplants instead. I'll definitely be cooking it again - delicious!!!!!!!!!!!
