Found this one in a little Family Circle- Casseroles and one pots recipe book. This is my version- Very nice!

  • 1kg cubed pork

  • Oil for frying

  • 2 x teaspoons cumin

  • 1 x teaspoon dried corriander leaves

  • 1 x teaspoon garam masala

  • 1/2 x teaspoon tumeric

  • 1 x onion (chopped)

  • 3 x medium washed potatoes (into chunks-skins on)

  • 1 x large sweet potato (into chunks)

  • 1/2 x butternut pumkin (chunks)

  • 3 x celery stalks (sliced)

  • 1 x litre beef stock

  • Good pinch sea salt & ground black pepper to taste

  • 1.

In a large pot brown pork in small batches on high heat. Set aside on paper towel to drain. Add the spices and onion to pot and cook until onion softens. Add pork, potato, sweet potato, pumpkin, celery, beef stock, seasoning and simmer on low heat for 30 to 45 minutes.

  • 2.

The pumpkin will break down and thicken the dish- can be served with rice or by itself with some garlic bread on the side. Turned out really nice! :)..
