Found this one in a little Family Circle- Casseroles and one pots recipe book. This is my version- Very nice!
In a large pot brown pork in small batches on high heat. Set aside on paper towel to drain. Add the spices and onion to pot and cook until onion softens. Add pork, potato, sweet potato, pumpkin, celery, beef stock, seasoning and simmer on low heat for 30 to 45 minutes.
The pumpkin will break down and thicken the dish- can be served with rice or by itself with some garlic bread on the side. Turned out really nice! :)..
