Tasty and very easy to make. This is comfort food, plain and simple.
Preheat oven to 180C.
Spray oven proof dish with cooking spray.
Trim cauliflower and cut into florets.
Steam cauliflower until tender.
Heat butter in a saucepan over medium heat.
When butter is melted, whisk in flour.
Cook, stirring, for 2 minutes.
Add milk, whisking constantly to make sure there are no lumps.
Cook another 3-4 minutes, allowing sauce to thicken.
Season with nutmeg, salt and pepper.
Place steamed cauliflower in the prepared dish.
Top with half of the cheese.
Pour the white sauce (bechamel) over the cheese.
Top with the remaining cheese.
Bake, uncovered for 20-30 minutes until golden and bubbly.
