Perfect for anyone who enjoys a yummy meal after a long day at work or school!

Ingredients

  • 1 C vegetable stock

  • 1 large carrot, grated

  • 1 large zucchini, grated

  • 1 onion, diced

  • 2 cloves of garlic

  • 1/2 red capsicum

  • 1 C alborio rice

  • 2 chicken breast fillets, chopped

  • 1/2 tspn rosemary

  • Pinch of salt and pepper

  • 1 tbsp olive oil

Method

  • 1.

    Put oil, onion and garlic in a pan. Cook until brown.

  • 2.

    Add rice. Stir until the rice is slightly brown.

  • 3.

    Add all vegetables and mix togther.

  • 4.

    Add stock one cup at a time until all absorbed.

  • 5.

    Add herbs and salt and pepper. Leave to simmer on high for 10-15 minutes, stirring occasionally.

  • 6.

    Serve straight away with parmisan cheese (optional)

you put the rice in with the chicken after its cooked
