Put oil, onion and garlic in a pan. Cook until brown.
Add rice. Stir until the rice is slightly brown.
Add all vegetables and mix togther.
Add stock one cup at a time until all absorbed.
Add herbs and salt and pepper. Leave to simmer on high for 10-15 minutes, stirring occasionally.
Serve straight away with parmisan cheese (optional)
