This is the ultimate lemon cake for anyone who really loves lemon. It is cool, refreshing, yet moist and rich.
Pre-heat oven 180C
Cut lemons (skin and all) and process in food process till fine
Add sugar and process for 1 minute
Add butter, eggs, yoghurt, olive oil and vanilla paste and process for 2 minutes
Lastly, add flour, orange zest and baking powder and pulse till just combined.
Please do not overmix.
Transfer to baking pan and bake for 45 minutes.
Stand cake in pan for 5 minutes before turning out on a wire rack to cool.
You can use oranges or raspberries instead of lemons.
