Very quick and easy! also very delicious. Perfect recipe to use up some leftovers!

Ingredients

  • 6 cups of penne pasta (you can use already cooked pasta from the night before)

  • 200g of basil pesto

  • 100g of semi sundried tomatoes roughly chopped

  • 2-3 tablespoons of olive oil

  • 2 chicken breasts cooked (could also be leftovers from the night before)

  • 1 tsp crushed red chilli

  • 1 clove of garlic crushed

Method

  • 1.

    Place the pesto, sundried tomatoes, olive oil, garlic and chilli into a small saucepan and simmer on a low heat just to warm through- stirring occasionally.

  • 2.

    Cook the pasta and the chicken ( if both already cooked just warm them up!)

  • 3.

    Drain pasta and set aside. once the chicken is cooked roughly chop to your desired size (can be big chunks or small strips)

  • 4.

    Tip the pasta back into a pot, add the chicken and pour over the pesto mixture. using tongs stir throught until everything is coated.

  • 5.

    This dish is perfect hot or cold!
