The first time I tasted this dish was when I had lunch in a function hall served as appetizer. I like it so I tried to interview the catering on how they made it. They did not reveal the whole truth but more or less I got the point. I tried it out in my kitchen and here is the result.

  • 100 grams dried Noodle, boiled

  • 10 big size prawns, peeled but leave the tail intact

  • 1 lime cut into half and squeezed to get the juice

  • Pinch of salt and pepper

  • 5 cloves garlic, finely sliced and fried.

  • 2 eggs

  • 2 spring onion, finely sliced

  • 1.

    Prepared the Noodle:

  • 2.

Boil noodle until soft but still firm which takes around 5 minutes, then set aside.

  • 3.

Add pepper, salt, garlic and spring onion. Mix well.

  • 4.

Add egg into the mixture, stir well and leave the mixture for a while.

  • 5.

    Prepare the prawn:

  • 6.

Add lime juice to the prawn

  • 7.

Take one prawn, roll the seasoned noodles around the prawn.

  • 8.

Put it on a tray and leave it for a while. Repeat this process for the remaining prawns.

  • 9.

Heat cooking oil on medium heat

  • 10.

Deep fry the wrapped prawn until the noodle changes color into yellow-brown color. Remove and drain.

Serve warm with sweet and sour sauce.
