Spaghetti Alla Diavola

Diavola means devil in Italian and refers to any dish which has been enlivened with chilli and garlic.


  • 500g spaghetti

  • 1 cup extra virgin olive oil

  • 3 cloves garlic, peeled and finely sliced

  • 1 diced hot chilli, deseeded and finely diced

  • ¼ cup Italian parsley, finely chopped

  • Freshly grated parmesan, to serve


  • 1.

    Cook spaghetti according to the packet instructions.

  • 2.

    While the pasta is cooking, heat olive oil in a pan on medium heat. Add the garlic and chilli and cook for 1-2 minutes until the garlic turns translucent and starts to brown slightly.

  • 3.

    Drain the pasta when cooked, and toss with the garlic and chilli oil.

  • 4.

    Season to taste. Sprinkle grated parmesan and parsley to serve.


Note: The “Diavola”, or Italian for “devil”, in this dish comes from the feisty chilli and garlic oil, although Matt says that this version is quite mild “so add more garlic and chilli to crank it up if you like.”
