This is kind of a cross between a carrot cake and sticky date pudding. It's a really rich cake but so good you just want to keep eating it til you're sick (...which is what I tend to do)


  • 1 cup Wholemeal Self Raising Flour

  • 1 tsp Baking Powder

  • 1 tsp Bicarb

  • 1/2 tsp Cinnamon

  • 1/2 tsp Nutmeg

  • 1/2 tsp Ginger

  • 1/2 tsp Salt

  • 3/4 cup Raw Sugar

  • 2 Eggs

  • 1/2 cup Oil

  • 3 medium grated Carrots

  • Zest of 1 Orange

  • 1/2 cup Sultanas

  • 1/2 cup Dates - coarsly chopped

  • 1/2 cup Almonds - coarsly chopped

  • ICING:

  • 250g Cream Cheese - cold

  • 50g Butter - softened

  • 1 tsp Vanilla

  • 275g Icing Sugar

  • Zest of 1 Orange


  • 1.

    Turn oven to 175 C

  • 2.

    Put all ingredients in a bowl and mix well.

  • 3.

    Pour into a loaf tin lined with baking paper or a 12 hole muffin tin sprayed with cooking spray.

  • 4.

    Bake for 40 mins or 20 - 25 mins for muffin size.

  • 5.

    ICING: Beat butter til white and creamy.

  • 6.

    Add cream cheese and beat til smooth.

  • 7.

    Add vanilla and orange zest and beat in.

  • 8.

    Gradually beat in icing sugar til combined.

  • 9.

    Spread ontop of cake/ cakes

This muffin is quite good. Plenty of texture and complimenting flavours (carrot, orange and dates work very well together). I added some (1/4 tsp) ground coves and used peanut oil - This added to some depth to an already delightful muffing.
