Heilala Vanilla Lemon Muffins

A staple for the kids lunch box these easy to make muffins are loved by young and old.


  • 2c Self raising Flour

  • 3/4 C White Sugar

  • 1 Lemon (zest only)

  • 1 Egg

  • 1C Milk

  • 60g Butter

  • 2 Tsp Heilala Vanilla extract or (paste if seeds wanted)

  • 1/3 C Lemon juice

  • 1/3C Heilala Vanilla Sugar


  • 1.

    Mix flour and sugar together, beat egg milk and lemon zest together and add to dry ingredients, along with melted butter. Gently combine until just mixed.

  • 2.

    Pour into prepared muffin tins and cook for 15-20 minutes at 180 degrees C

  • 3.

    As soon as muffins are ready brush a little lemon juice on each one and sprinkle with vanilla sugar. Allow the muffins to cool in tins for 5 minutes before removing.
