Drawn stuffed Chicken breast with rich creamy mango sauce
Cut pocket in the Chicken and place two king prawns in each pocket. secure with tooth picks.
Heat fry pan add oil and cook chicken till golden brown,and cooked through remove chicken and keep warm. add brandy to pan simmer for 2 minutes, add orange juice and reduce by half. Add cream and simmer till reduced and thickened. Add mango slices and simmer till mango warmed through.
Spoon sauce and mango over chicken and serve with tossed green salad or fresh vegies
Tin mango can be used if mango not in season
