Olive Bruschetta

You can try lots of different toppings but the key, according to Matthew Hayden, is fresh bread!

Ingredients

  • 1 loaf ciabatta or other crusty Italian-style bread

  • 4 Roma tomatoes, diced

  • 1 red onion, finely chopped

  • 1 cup kalamata olives, sliced

  • 1 sprig basil, finely shredded

  • 1 teaspoon lemon juice

  • 2 garlic cloves, finely chopped

  • Extra virgin olive oil and balsamic vinegar

  • Salt and pepper

Method

  • 1.

    Drizzle the lemon juice over the chopped red onion.

  • 2.

    Toast off the 2 garlic cloves, until lightly golden.

  • 3.

    Mix together the tomatoes, olives, onion, basil, garlic, salt and pepper to taste.

  • 4.

    Cut 4 thick slices from the bread. Toast under a griller or on a BBQ grill until golden brown. Cool, and then top with olive mixture.

  • 5.

    Drizzle lightly with olive oil and season to taste.

  • 6.

    Serve immediately.
