Little Lemon Creams

These are simple sweet little lemon puddings. You could serve them with some lemon butter biscuits too.


  • 500 ml Cream

  • 140 g caster sugar

  • Juice of 2 Lemon

    Put cream and sugar in a saucepan, bring to the boil , and boil for 3 minutes.

    Remove from the heat, whisk in the juice and place in little cups, glasses, or bowls and chill for 3 hours to set.


* If you want to make these more zesty, just grate the rind of 1 lemon and mix with the lemon juice to add in to the boiled cream and sugar.
* To make little orrange creams, replace the juice of 2 lemons with the grated rind and the juice of 1 orange.
* Serve with some little Jane’s Biscuits on the side if you like.
