Bacon, Mushroom and Olive Pizza

We show you how to re-create Liz Hanson's pizza from episode one of Matthew Hayden’s Home Ground.

Brought to you by

  • Dough:

  • 4 cups organic flour - half wholemeal, half white

  • 1 teaspoon salt

  • 2 teaspoons powdered yeast or 30g fresh yeast

  • 1 tablespoon honey

  • 2 tablespoons extra virgin olive oil

  • 2 cups water at room temperature

  • Toppings:Use your favourite pizza toppings, or try this combination:

  • 1 tub of tomato paste

  • .5 cup of cherry tomatoes cut in half

  • 2 rashes of free range bacon, chopped

  • Haldful of chopped mushrooms

  • Handful of fresh herbs

  • 2 cups of mozzarella

  • Small handful of olives

  • Extra virgin olive oil

  • Salt to taste

  • 1.

    Pre-heat the oven to 180 degrees Celsius.

  • The dough::

  • 1.

    In a large mixing bowl combine flour, salt, yeast, honey, olive oil and water. You can use your hands, or an electric mixer. As a guide, you can aim to get the dough’s texture similar to the texture of an earlobe.

  • 2.

    Cover the bowl with a clean plastic bag and allow it to sit so that the dough rises until it has doubled in size. Depending on where you are, this could take between 60 and 90 minutes. Once the dough is ready, lightly flour your work bench and roll out a portion big enough for your pizza tray. Place the dough on your an oiled tray and leave it for a short while to rise.

  • Pizza topping::

  • 1.

    Spread tomato paste evenly on the base, leaving a 2cm edge for the crust. Add cherry tomatoes, olives, mushrooms and bacon. Sprinkle the herbs on top and drizzle some olive oil. Sprinkle a pinch of salt to taste, and add the mozzarella.

  • 2.

    Cook in the oven for 20 minutes or until the toppings have browned and the base is cooked through.
