Children friendly... yummy... yummy... warms your tummy... vegetable soup!!!

Ingredients

  • 1 Onion finely diced

  • 1 large Carrot finely diced

  • 2 sticks celery finely diced

  • 1 medium turnip cut into 1cm cubes

  • 1 medium swede cut into 1cm cubes

  • 2 potatoes cut into 1cm cubes

  • 2 cloves garlic finely chopped

  • 1 400g tin crushed tomatoes

  • 2 L boiling water

  • 3 vegetable stock cubes

  • 1.5 cups rice

  • Ground pepper to taste.

Method

  • 1.

    Heat a small amount of oil in a large pot.

  • 2.

    Add Onion, carrot & celery, and cook until onion is translucent.

  • 3.

    Add Turnip, swede & potatoes and cook stirring regularly for 5 minutes.

  • 4.

    Add garlic, and crushed tomatoes and stir.

  • 5.

    Add 2 L boiling water and vegetable stock cubes and stir well.

  • 6.

    Simmer for 5 minutes.

  • 7.

    Add 1.5 cups rice and stir well.

  • 8.

    Place a lid onto your pot and leave to simmer until rice is cooked.

  • 9.

    Serve!

Notes

You can replace vegetable stock with chicken or beef stock cubes.
You can use 2 L ready made stock of your choice.
Add whatever vegetables your family likes.
Great with 200 g spinach added just before serving.
