Children friendly... yummy... yummy... warms your tummy... vegetable soup!!!
Heat a small amount of oil in a large pot.
Add Onion, carrot & celery, and cook until onion is translucent.
Add Turnip, swede & potatoes and cook stirring regularly for 5 minutes.
Add garlic, and crushed tomatoes and stir.
Add 2 L boiling water and vegetable stock cubes and stir well.
Simmer for 5 minutes.
Add 1.5 cups rice and stir well.
Place a lid onto your pot and leave to simmer until rice is cooked.
