Cold cucumber salad is great for those who love spicy side dishes. It is easy to prepare and can be refrigerated and used the next day.


  • 2 whole cucumbers soaked in vinegar for an hour

  • 2 teaspoons Sesame oil

  • chopped Coriander

  • 1 Chillie thin slices (remove seeds)

  • 1 clove garlic diced

  • Light soy sauce

  • 1/4 teaspoon sugar


  • 1.

    Cut the cucumbers into thin slices.

  • 2.

    Add the cucumber slices, chilli and diced garlic together and mix well. Set aside.

  • 3.

    In a small bowl, combine the light soy, sugar and sesame oil and stir well until sugar has dissolved.

  • 4.

    Add the sauce to the cucumber bowl and marinate with hand.

  • 5.

    Add coriander and chill until served.


This salad goes well as a small side dish for Steak. You may combine thin slices of shin beef for a beef salad for a lunch.
