Cold cucumber salad is great for those who love spicy side dishes. It is easy to prepare and can be refrigerated and used the next day.
Cut the cucumbers into thin slices.
Add the cucumber slices, chilli and diced garlic together and mix well. Set aside.
In a small bowl, combine the light soy, sugar and sesame oil and stir well until sugar has dissolved.
Add the sauce to the cucumber bowl and marinate with hand.
Add coriander and chill until served.
