What I like about this King Oyster Mushroom is how it looks like and the texture when it is cooked.
Dry clean mushrooms and cut into longish quarters.
Slice garlic into razor thin slices.
Heat oil on medium heat and fry garlic - it melts when it hits the hot oil.
Add mushrooms and turn up the heat.
Stir fry for 2 minutes till golden.
Add fish sauce and pepper - toss well.
Finally add besan flour, give it a good toss and it is ready.
Serve on toasted bruschetta.
Do not overcook King Oyster mushroom because they become very rubbery.
Bruschetta is a dialectal term for bread toasted and rubbed with garlic. One could put anything on the bread.
