This stuffed chicken breast goes really well with brown rice and a cheesey sauce.


  • 1 large chicken breast per person

  • 1 tbsp cranberyy sauce per breast

  • 2oz blue cheese per breast

  • salt and pepper

  • oil for flash frying

    Slice breast length ways to make a pocket. Stuff with 1 tablespoon of cranberry sauce and 2oz of your favourite blue cheese per breast. Use a knife to 'stretch' a rasher of streaky bacon (you could use parma ham or pancetta). Wrap the chicken breast with bacon and secure with cocktail sticks or string. Brown each breast to shrink the bacon then place in the breasts in the oven, Gas Mark 6/200c/400f, for about 15 mins or until the juices run clear!!!

    You could use the left over blue cheese to make a cheese and mushroom sauce to go with the breasts!! Delicious!!!


For cheese sauce
Fry finely diced onion, garlic to taste and sliced mushrooms in about 3 tblsp of white wine. Add blue cheese until melted then thin the mixture with cream until desired consistency.

Hi Carol: I'm 3rd generation Canadian. My paternal grandparents came from England. My Grandmother from up near Bradford and my grandfather from Plymouth.

I was in Plymouth about 22 years ago and loved it. Would like to go back but need the money. LOL!

I am definitely going to make this!. Sounds so good and just the right portion.
