Whisk Ingredients 1 until smooth.
Add and whisk Ingredients 2.
Combine Ingredients 3 in a large bowl.
Make a well in the centre of dry ingredients.
Add wet ingredients, stir and mix till just combine.
Do not overmix.
Use an ice-cream scoop for even distribution of muffin batter.
Scoop batter into muffin cups.
Top each muffin with 1 or 2 walnuts.
Bake muffins for 15 - 25 minutes.
Cool cooked muffins on cake rack for 5 minutes.
