Chocolate, Banana and Pear Muffins

This was originally a banana muffin recipe that came from my grandmother's handwritten notes and uses Olive Oil instead of butter. I played around with the recipe and included chocolate chunks and tinned pears - just delicious!


  • 1cup Plain Flour

  • 1/2 cup Self Raising Flour

  • 2 tsp Baking Powder.

  • 2 medium mashed Bananas

  • 1/2 cup Caster Sugar

  • 1/2 cup light Brown Sugar

  • 4 Eggs

  • 1 tsp Vanilla Extract

  • 1 tsp Cinnamon

  • 1/4 tsp Nutmeg

  • 1/4 tsp Salt

  • 1 425g can Pear halves in fruit juice

  • 1/2 cup Olive Oil

  • 1/3 cup Milk

  • 1/3 cup Pear Juice

  • 200g Dark Chocolate - cut into large chunks

    Put the mashed bananas, eggs, oil, vanilla and sugars in a bowl and beat by hand til well combined.

    Fold in the flour, baking powder, cinnamon, nutmeg and salt and mix til just combined.

  • 3.

    Add the milk and juice and stir.

  • 4.

    Stir through 3/4 of the chopped chocolate.

  • 5.

    Fill 12 muffin pans with the mixture.

  • 6.

    Cut each pear half in half and push segment into one side of the batter.

  • 7.

    Sprinkle/ push the remaining chocolate chunks over the tops of each.


Don't overbeat the mix or it will toughen when baking. The first time I made these I whipped the eggs for ages which gave a weird dryish texture when cooked. Try and mix everything as little as possible - especially when the flour goes in.
