This is just a good basic butter cake with a caramel/coffee flavour. I used coffee flavoured milk in the icing to get a delicate hint of coffee without it being overpowering - and so you don't start buzzing after a piece or two.....


  • 125g Butter - chopped and at room temp.

  • 2 tsp Vanilla Extract

  • 150g Dark Brown Sugar.

  • 2 Eggs.

  • 150g Self Raising Flour.

  • 30g Custard Powder.

  • 3 tsp Instant Coffee powder.

  • 130ml Milk.


  • 125 g Butter - chopped and very soft.

  • 240g Icing Sugar mixture.

  • 2 Tbsp Coffee flavoured Milk (Dare or Moove etc)

  • 1/2 tsp Cinnamon.

  • Shaved Chocolate.


  • 1.

    Turn oven on to 180 C

  • 2.

    Grease and line 2 sandwich tins.

  • 3.

    Put all the cake ingredients in a mixing bowl.

  • 4.

    Beat on low speed til combined.

  • 5.

    Beat on medium speed til changed in colour.

  • 6.

    Spread into prepared pans and bake 30 - 35 mins.

  • 7.

    Transfer to wire rack to cool.

  • 8.


  • 9.

    Beat butter with electric mixer til it turns very pale.

  • 10.

    Add sifted icing sugar in batches.

  • 11.

    Add the milk and then the cinnamon.

  • 12.

    Beat another minute so it really goes fluffy.

  • 13.

    Top one layer with half the icing, put the other layer ontop and spread with remaining icing.

  • 14.

    Shave chocolate ontop of cake
