This is just a good basic butter cake with a caramel/coffee flavour. I used coffee flavoured milk in the icing to get a delicate hint of coffee without it being overpowering - and so you don't start buzzing after a piece or two.....
Turn oven on to 180 C
Grease and line 2 sandwich tins.
Put all the cake ingredients in a mixing bowl.
Beat on low speed til combined.
Beat on medium speed til changed in colour.
Spread into prepared pans and bake 30 - 35 mins.
Transfer to wire rack to cool.
Beat butter with electric mixer til it turns very pale.
Add sifted icing sugar in batches.
Add the milk and then the cinnamon.
Beat another minute so it really goes fluffy.
Top one layer with half the icing, put the other layer ontop and spread with remaining icing.
Shave chocolate ontop of cake
Really beating the butter for the icing will give you a soft, fluffy result because you're incorporating lots of air into it.
