Adrian Richardson's mothers day recipe


  • 500g Self-raising flour

  • 2 Large eggs

  • 800ml Milk

  • 1tsp Vanilla extract

  • Pinch Salt

  • Olive oil for brushing the pan


  • 1.

    Sift flour in a large bowl

  • 2.

    Combine milk, eggs, vanilla extract in a separate bowl and mix lightly

  • 3.

    Add the wet mixture to the flour and beat well for 3-5 mins until the batter is light & fluffy

  • 4.

    Cover & stand for 1 hour

  • 5.

    Place proffertjes pan on the cook top at medium heat and brush with a liberal dose of olive oil

  • 6.

    When the oil is hot place batter into each hole filing just below the rim

  • 7.

    When bubbles start appearing in the batter, flip each proffertjes gently until golden and serve.

Mayple syrup & icing sugar
Honey & sprinkles
Banana & ice cream
Chocolate sauce & chocolate ice cream

these are pikelets not poffertjes, they are meant to have yeast and buckwheat flour.

Made these the other day - must say, they weren't that great. Typical Poffertjes recipes have yeast in there and this recipe appealed because of the omittance of yeast as I didn't have any on hand. I think I'll go the extra mile and try a yeast reipe next time.
