A brief flashback to the chinese restaurant at home with this meal. Delicious sticky honey, melt in your mouth vermicelli and deep fried chicken... DELICIOUS
Sift the flours together in a medium bowl with the sugar. Add the egg and iced water and mix with a metal whisk until well combined and without lumps. Set aside for 20 minutes.
Cut the vermicelli into 5cm pieces then deep fry in 2 batches for a couple of seconds in hot oil for a few seconds until white and puffy ( Do not allow to brown ) remove with a slotted spoon to a plate lined with paper towel.
Dip the chicken into the batter about 8 pieces at a time and deep fry until light golden brown and cooked through. Move around the oil occasionally to ensure even cooking.
Drain on paper towel then transfer to a tray and place into oven heated to 150C as you cook to keep warm.
After all chicken is cooked and in oven to be kept warm share the vermicelli out onto plates and gently heat honey while stirring until thin and hot.
Share chicken over plates on top of Vermicelli and drizzle generously with the honey. Serve immediately.
Transfer chicken from batter to oil using tongs to avoid putting too much batter into the oil. Skim any batter pieces that float to the top of the oil as you cook to save it burning.
