This is a very simple, tasty and healthy fish head curry.
Fry Ingredients 1 in 3 tablespoons of oil for about 1 min.
Add Ingredients 2 and continue to fry for 2 mins
Add curry leaves and continue frying
Add Ingredients 3 and stir well over low flame
Add 1 cup of water and 3 tabelspoons of yoghurt
Stir well, add fish sauce and kicap manis or sweet sauce
Cover and cook for 5 mins
Add the remaining 1 cup of water and eggplants
Cover and cook till eggplants are tender but not soft
Add fish and tomatoes
Cover and cook for 8 mins
Check for seasoning
Ready to serve
I do not use coconut milk in all my curries. I use GREEK YOGHURT which makes a healthy meal. This curry is best eaten with Basmati Rice or Roti. It tastes better the next day.
