Salmon Fish Head Curry

This is a very simple, tasty and healthy fish head curry.

Ingredients

  • 3 small Salmon fish heads - cut into 6 half head pieces

  • 1 medium egg plant - cut into thumb size piece

  • 2 tomatoes - cut into halves

  • 1 Sweet large green chillie (optional)

  • 3 tablespoons olive oil

  • Ingredients 1

  • 1 piece cinnamon stick

  • 3 pieces clove

  • 3 pieces green cardamons

  • 1 piece star anise

  • Ingredients 2

  • 1 thumb size giinger - mince

  • 1 spanish onion - chopped

  • 2 garlic - mince

  • 2 sprigs curry leaves

  • Ingredients 3

  • 1 teaspoon turmeric powder

  • 2 teaspoons chillie powder

  • 2 tablespoons cumin powder

  • 2 cups water

  • 3 tablespoons Greek yoghurt

  • 3 tablespoons fish sauce

  • 1 tablespoon kicap manis or sweet soy sauce

Method

  • 1.

    Fry Ingredients 1 in 3 tablespoons of oil for about 1 min.

  • 2.

    Add Ingredients 2 and continue to fry for 2 mins

  • 3.

    Add curry leaves and continue frying

  • 4.

    Add Ingredients 3 and stir well over low flame

  • 5.

    Add 1 cup of water and 3 tabelspoons of yoghurt

  • 6.

    Stir well, add fish sauce and kicap manis or sweet sauce

  • 7.

    Cover and cook for 5 mins

  • 8.

    Add the remaining 1 cup of water and eggplants

  • 9.

    Cover and cook till eggplants are tender but not soft

  • 10.

    Add fish and tomatoes

  • 11.

    Cover and cook for 8 mins

  • 12.

    Check for seasoning

  • 13.

    Ready to serve

Notes

I do not use coconut milk in all my curries. I use GREEK YOGHURT which makes a healthy meal. This curry is best eaten with Basmati Rice or Roti. It tastes better the next day.

Eating fish head curry is an acquired taste - it is either you love it or loathe it. I love it and the Salmon oil is very healthy.

I eat this curry the next day with Roti or naan bread
