My kids love my easy Parmigiana recipe. Very easy, not full of spices that kids dont like. They can even help !!
Cut each Chicken breast in half. Pound each piece untill thin.
Cut off any traces of fat.
Place beaten eggs in a bowl, crumbs in another.
Place tomatoes, oregano, basil and dill in a bowl and mix though,
Cut off fat around bacon rashers and place bacon on top of chicken. Very lightly pound together till bacon stays on when lifted.
Dip chicken into egg, sprinkle over salt and pepper, then dip into crumbs.
Place onto a heated oven tray, and cook for 5-10 minutes each side. When browned, pour tomato mixture over each Parmigiana, sprinkle with Mozzarella cheese. Cook untill cheese is melted
Serve with Salad and chips/ Vegies...
