Qatayef is a special delicious Middle Eastern dessert, commonly served during Ramadan. Sometimes it’s called "Arabic Pancakes". Qatayef is filled with sweetened cheese, cooked cream or nuts, then deep-fried or baked.

  • ***QATAYEF batter:

  • DRY Ingredients: 2 cups Flour+ 1/8 cup Semolina flour+ 1/8 cup Milk Powder+ 2 tbsp Vanilla Instant Pudding+ 1 ½ tsp Baking Powder+ 1/8 tsp Baking Soda+ 1/8 tsp Salt

  • 2 tsp Sugar+ 1 tsp Yeast+ ½ cup warm water. Cover& set aside for 10 minute to proof (becomes frothy). This is very important.

  • 1 – 1 ½ cup warm water

  • 2-3 cups oil for deep frying the Qatayef.

  • Sugar Syrup (method in Notes)

  • ***FILLING:

  • 1 cup walnuts finely chopped (or mix of nuts)+ 1 tsp Cinnamon+ 3 tbsp Sugar

  • Or:

  • 1 cup thick cream+ ¼ cup flour. Cook together. Pour in plate. Cover till cool.

  • Or:

  • 1 cup Ricotta cheese, crumbled (or any white unsalted cheese)+ 2 tbsp sugar


  • 1.

    Mix dry ingredients together. Add yeast mixture and mix well.

  • 2.

    Add water gradually till dough is thick to pour, but not thin.

  • 3.

    Cover and leave to rest and raise for minimum ½-1 hour in warm place.

  • 4.

    Meanwhile prepare the filling desired. Prepare Sugar syrup as well.

  • 5.

    After batter has rested and raised, wipe a non-stick pan with little oil and heat over medium heat.

  • 6.

    Pour over pan as circles, 3-4 inch circle each, and cook over low-medium heat till top bubbles and dries, and bottom becomes golden (Do not flip, we cook only one side). Remove and keep cover in a towel and repeat same steps till all batter is consumed.

  • 7.

    Fill immediately with any filling desired, by placing 1 tsp in middle of uncooked side of pancake circle and fold the pancake in half, to make a half moon shape and seal edges by pressing together with finger tips starting from one side to reach the other side of the half-moon.

  • 8.

    Heat the oil in a deep sauce pan, and deep fry the filled Qatayef till golden brown on both sides. Remove from oil & drain over paper tissue to absorb excess oil then throw in prepared cooled sugar syrup for 2-3 seconds only. Drain& place in serving plate.

  • 9.

    Garnish with some chopped nuts and serve warm with a cup of tea.


Sugar syrup: 2 cups sugar+ 1 cup boiling water+ 1 tsp lemon juice+ 1 cinnamon stick. Bring to boil over high heat then reduce heat and simmer uncovered for 10 minutes.
You can prepare Qatayef, fill with desired filling then arrange separated in flat plate and chill in freezer (without frying). Place in bags and keep bag in freezer till need to use. Take out of freezer and fry immediately before serving.
