A simple and light meal using beautiful organic beef.
Bring the beef fillet to room temperature then season with salt and pepper.
Sear the beef very quickly rotating as you goto lock in the seasoning.
Using a very sharp knife cut the beef very thinly and place between greesproof paper and using a rolling pin flatten them a=until paper thin.
Place two or three on a large plate and scatter with basil leaves or rocket or both.
Place cut tomatoeas around the plate and drizzle with lemon juice and oilve oil all over the beef.
Scatter Parmiggiano shards over the beef and serve
We allso use capers for this dish when we want a nice kick.
