A creamy chicken shepherds pie, perfect family meal for those chilly winter nights
Chop Chicken into small pieces and sauté in olive oil until browned. Remove from pan and set aside. In same pan sauté spring onions, bacon, broccoli until tender, add vegetable stock to moisten and avoid sticking in pan. Turn off heat and add chicken and thickened cream, season with salt and pepper.
Peel, chop and boil potatoes until soft. Drain and mash, adding milk and I egg. Transfer chicken mixture to baking dish and spread mashed potato over top. Sprinkle with grated cheese & melted butter and bake in moderate oven until crisp and golden on top.
