My husband saw I was so tired last week and said he would cook. He made this from himself and it was wonderful. I like to make sure there's some sauce left and not let it redue to oils at the end.
Preheat oven to 180C and layer onions into a large non stick baking tray,then spread out potato pieces and top with the chicken. Try not to let the chicken overlap.
Mix together the remaining ingredients and pour evenly over entire dish. Cover with foil and bake for 30 minutes.
Remove foil and turn chicken not disturbing the other ingredients, Return foil back on and place back in oven a further 30 minutes.
Remove foil again and turn chicken then baste potatoes and chicken with the sauces and return to oven uncovered.
Bake until sauce has reduced to a thick consistancy and chicken is thoroughly cooked through. Then serve immediately
