This tasty creamy finger food was created in my kitchen when I had some friends coming over in the evening. It consists of toast slices covered with creamy vegetable mix and topped with some mozzarella cheese and baked in the oven till golden. It was a blast, so I wanted to share this recipe with you here, but didn’t know what to call it, so my friend “OLA” suggested this name, and so it is. Hope you enjoy it.


  • *** 12 square toast slices (or can use French bread, sliced)

  • *** 1/3 cup Mozzarella cheese for topping

  • *** For Filling:

  • ½ cup canned mushrooms

  • ½ red Bell Pepper, roughly chopped

  • 2 Spring onions, roughly chopped

  • ½ cup Mayonnaise

  • 1/3 cup Mozzarella cheese

  • 2 tbsp extra virgin Olive Oil

  • ¾ cup white cream cheese (like Puck or Al Maraái or any suits you)

  • 1 tsp coarse Dijon mustard+ 1 tsp dried Oregano+ 1tsp dried Thyme+ ½ tsp Black Pepper+ ½ tsp Garlic powder+ ½ chilli powder+ ½ tsp Salt


  • 1.

    Chop mushroom, bell pepper and spring onions in a food processor till finely chopped.

  • 2.

    Transfer to a bowl and add the rest of the filling ingredients and mix well. Add more salt if needed.

  • 3.

    Arrange toast slices in a baking tray (line it with baking paper if desired), and spread 1 ½ tbsp on each slice. Top each with little mozzarella cheese.

  • 4.

    Bake in 425F (220C) heated oven on top third rack for about 5 minutes or till golden brown. Serve hot.

Huda, try this with tinned tuna and dill instead of the vegetables. It's similar to something I used to make for lunch when I was pressed for time or if I was just craving it.

oo yea Jackie,I do so, tuna and the vegetables together, and i add lettuce as well .. so so yummy my dear ..and as you said, it'll be great as a quick lunch ..
This one i kept it vegi, for all who don't like seafood or are vegetarians :-D

It is really yummy Diana .. my friends loved it :-) .. I kept it vegetarian, but with a slice of roast beef, or as my friend jackie here suggested, mixed with some Tuna .. all so yummy yummy :-D
