This delicious light salad (despite what you will see the dressing ingredients are) is so easy to make and can be prepared ahead of time, kept in the fridge till time of serving.
***Prepare dressing by mixing ingredients together in a jar. Shake well and keep in fridge till you prepare the salad, about 20 minutes.
***Meanwhile, prepare the salad:
Boil some water with salt and cook Peas& carrots mix for about 5 minutes. Drain.
Cook pasta as directed on package, in boiling water, with salt and little oil over low heat for about 10-12 minutes. Drain.
Immediately add dressing to pasta while hot, and then add the rest of the salad ingredients and toss well. Add salt to season.
Cover and keep in fridge for about ½ an hour. Serve cold.
