Gugelhoff

This cake is moist, rich and worth every calorie

Ingredients

  • 115 g Sultanas

  • 50 ml Rum

  • 315 g Butter

  • 315 g Sugar

  • 5 g Salt

  • 6 g Vanilla essence

  • 110 ml Sour cream

  • 265 g eggs

  • 265 g flour

  • 100 g Almond meal

  • 165 g hazelnut meal

  • 25 g baking powder

  • 300 g good quality chocolate

  • 300 ml cream

Method

  • 1.

    Soak Sultanas in rum for an hour or overnight

  • 2.

    Cream butter, sugar, salt and vanilla with a wisk

  • 3.

    Whisk sour cream and eggs in a separte bowl

  • 4.

    Add slowly to butter and sugar (being careful not to split)

  • 5.

    Mix sifted dry ingredients in by hand

  • 6.

    Add to mixture on low speed

  • 7.

    Add sultanas on low speed

  • 8.

    Grease and flour tins taking car not to miss any surface

  • 9.

    Put mix into tines 3/4 full

  • 10.

    Bake 185 c until golden and brown

  • 11.

    Leave rest for 5 to 10 mins then un mould whilst still warm

  • 12.

    Warm cream in a pan and slowly add the chocolate

  • 13.

    Once melted and the cake is cool drizzle over you cake

Notes

when a cake is 85c in the centre it is cooked
You can also add toasted almonds around the bottom like I have done here.

This looks fantastic! The recipe looks really yummy too. I really want to try making it and will give you my verdict - but I'm sure it will be gorgeous!
