Great& easy salad to prepare a head. Garnish just before serving. Can be served at any time.

Ingredients

  • ***for Salad:

  • 1 cup cherry tomatoes

  • 2 cup fresh mushrooms, sliced

  • 4 (420gm) cans sweet corn kernels

  • 1 medium Red Onion, chopped

  • ½ cup fresh Basil leaves

  • 2 tsp dried Basil

  • ***for dressing:

  • ¼ cup Mayonnaise+ ¼ cup thick cream (in Arabic: qeshta)+ ¼ cup extra virgin Olive Oil+ 1 tbsp lemon juice+ 2 tbsp white vinegar+ 1 clove garlic, crushed+ ½ tsp Black Pepper+ 1tsp salt

  • ***for garnishing:

  • ½ cup toasted Walnuts

  • ½ cup toasted Raisins

Method

  • 1.

    Mix dressing ingredients together. Toss in salad ingredients. Add salt to season.

  • 2.

    Top with walnuts and raisins just before serving.
