An elegant and delicious first course, these rich tasting crostini also make a lovely light lunch or super.
Preheat oven to 190 or 375f.
In a non stick pan heat the olive oil over a medium to high heat.
Saute garlic for about 30 seconds.
Add chopped mushrooms and saute for 3 to 4 minutes.
Pour in wine and increase heat to high and cook, stirring,until liquid evaporates, about 5 minutes.
Mix in salt and pepper.
Arrange bread on a large baking tray.
Tope each piece with mozzarella.
Bake 5 to 7 minutes, until cheese is melted.
Top crostini with mushrooms and sprinkle with parsley.
