Orts and Sorts 'Quiche'

A crustless quiche that uses many vegetables - fresh or left-over - and is very adaptable. It makes a healthy all-in-one meal that all the family enjoys, especially the cook... most preparation is straight through the food processor's grater!



  • 1 large potato, grated

  • 2 zucchini, grated,

  • 2 carrots, grated

  • 1/2 cup grated cheese

  • 1/2 440g can corn kernels

  • 1 stick celery, finely sliced

  • 1 onion finely chopped

  • 2-3 rashers bacon, diced

  • 1/2 cup SR flour

  • 2 tblspns oil

  • 2 eggs, lightly beaten

  • Vegetables can be varied at will… grated sweet potato, pumpkin, peas. Omit bacon for vegetarians or use finely chopped cooked chicken instead.


  • 1.

    Mix everything together and bake in a greased quiche dish for 40 minutes at 175°C. Too easy!
