A delicious one pot meal to serve wih a crusty loaf on a cold day.

Ingredients

  • 30g butter

  • 500g chicken thigh fillets diced

  • 1 onion sliced

  • 1 crushed clove garlic

  • 2 chopped bacon rashers diced

  • 1 chopped stick celery

  • 1 chopped carrot

  • 410g can crushed tomatoes

  • 310g can red kidney beans, rinsed & drained

  • 3 cups stock or water & 1 small chick stock cube

  • 1/3 cup small pasta

  • 2 tblespns chopped fresh oregano (optional)

  • 1 tblspn fresh chopped parsley

Method

  • 1.

    Heat butter in pan & add chicken, onion, garlic & bacon.

  • 2.

    Cook stirring until chicken is almost cooked. Stir in celery & carrot and cook 5 minutes. Stir in tomatoes, beans, stock & pasta. Give a stir so that pasta does not stick. Bring to boil and simmer uncovered about 30 minutes or until slightly thickened. Stir in herbs, simmer uncovered 5 minutes. Serves 4.

Great on a cold day in front of the tv watching footy…..or after a game of footy to warm your cockles. Serve with herb or garlic bread, change the vegges in it to suit.
