big family hearty pie...


  • 40g butter

  • 2 trimmed washed, halved and sliced leeks

  • 150g bacon chopped

  • 1 kg cubed chicken thighs

  • 1/4 cup plain flour

  • 1 cup thickened cream

  • 1 tbsp dijon mustard

  • 2 sheets of shortcrust pastry ready made or home made

  • 1 sheet puff pastry ready made or home made

  • 1 beaten egg


  • 1.

    Melt the butter in a frying pan and add the leek and bacon

  • 2.

    Cook 3 mins till leak is softened

  • 3.

    Add chicken cook for 7 minutes till browned

  • 4.

    Sprinkle flour over chicken mix cook and stir one minute

  • 5.

    Remove from heat

  • 6.

    Slowly add cream, then mustard and stir return to heat and bring to the boil

  • 7.

    Reduce heat and simmer 5 mins to thinken

  • 8.

    Pre heat oven to 200c

  • 9.

    Grease and line a 22cm springform pan

  • 10.

    Use 2 sheets of shortcrust to line the base and edges

  • 11.

    (here u can briefly blind bake if u wish) not essential though

  • 12.

    Spoon the chicken mix in and cover with the puff pastry, cut a cross in the centre for an escape hole for the steam

  • 13.

    Fold the pastry over the side, trim if u wish and seal

  • 14.

    Brush with egg and bake for 15 minutes

  • 15.

    Reduce oven to 180 and bake further till golden, appx 1/2 hour.

  • 16.

    Cool 10 mins and serve.

  • 17.

What do you mean by thickened cream???
