Melt the butter in a frying pan and add the leek and bacon
Cook 3 mins till leak is softened
Add chicken cook for 7 minutes till browned
Sprinkle flour over chicken mix cook and stir one minute
Remove from heat
Slowly add cream, then mustard and stir return to heat and bring to the boil
Reduce heat and simmer 5 mins to thinken
Pre heat oven to 200c
Grease and line a 22cm springform pan
Use 2 sheets of shortcrust to line the base and edges
(here u can briefly blind bake if u wish) not essential though
Spoon the chicken mix in and cover with the puff pastry, cut a cross in the centre for an escape hole for the steam
Fold the pastry over the side, trim if u wish and seal
Brush with egg and bake for 15 minutes
Reduce oven to 180 and bake further till golden, appx 1/2 hour.
Cool 10 mins and serve.
