Yummy little cupcakes, great narna flavour


  • 125g butter softened

  • 3/4 cup firmly packed brown sugar

  • 2 eggs

  • 2 cups self raising flour

  • 1 tsp mixed spice

  • 1 cup mashed ripe banana

  • 3/4 cup sour cream

  • icing---------------------

  • 125 g softened butter

  • 3/4 cup icing sugar

  • 1 tbsp lemon juice


  • 1.

    Preheat oven to 180C

  • 2.

    Line 2 12 hole muffin pans with patty cases

  • 3.

    Beat butter, brown sugar together til light and fluffy

  • 4.

    Add eggs and beat well

  • 5.

    Sift the flour and spice

  • 6.

    Fold into the butter mix

  • 7.

    And add sour cream and banana

  • 8.

    Divide between cases filling 3/4 full

  • 9.

    Bake for 20-25 mins till cooked

  • 10.

    Cool in pan 5 mins and then on a cooling rack

  • 11.


  • 12.

    Beat extra butter, icing sugar and lemon with beaters til smooth and creamy and spread on compleatly cooled cupcakes.


the more ripe the bananas the better.
decorate with handmade fondant mini bananas. or banana chips.
