This is a classic Soup dish from Thailand

Ingredients

  • Chicken or Prawn Stock (Do not use store bought contains to much salt, make your own)

  • Dried Shitaki Mushrooms

  • lemon grass (use the ends cut off roots and use purple bits)

  • 3 pieces Galangal

  • 1Kaffir Lime Leaves

  • 1 piece Tomato

  • 70 grChicken

  • 2 tablespoons Fish Sauce

  • 1Chilli (do not cut)

  • 1/2 tble Lime Juice

Method

  • 1.

    Put stock, mushrooms, lemon grass, leaves, galangal, chilli in saucepan and bring to boil, add chicken and simmer until cooked only takes a few minutes add tomato, lime juice and fish sauce and serve with rice
