Banana Sour Cream Cake

Dense Banana Cake mmmmm

Ingredients

  • 125 g butter

  • 1 tsp vanilla

  • 1 cup sugar

  • 2 eggs

  • 1 cup mashed banana

  • 4 tablespoons sour cream

  • 2 cups self raising flour

  • 1/4 tsp bi carb soda

  • icing------------------

  • 2 cups icing sugar

  • 2 tbsp sour cream

  • 30g room temp butter

  • cinnamon to taste

  • (if its dry add more sour cream and butter)

  • make the icing to your liking thick or thin, i love it thick and whip it up for 2 minutes...

Method

  • 1.

    Pre heat oven to 180 C

  • 2.

    Cream the butter and vanilla for one minute

  • 3.

    Add the sugar, the eggs and beat.

  • 4.

    Combine the banana and cream and add to the mix.

  • 5.

    Dont over beat if you like chunky banana cake

  • 6.

    Bake for 35 minutes or till springs back in the centre

  • 7.

    Cool the cake then ice it.

  • 8.

    I love it cooled in the fridge and served with tea

THANKS FOR THE COMMENT THIS RECIPE WAS PASSED DOWN TO ME AND I FOUND IT A LITTLE SOGGY SOMETIMES SO I CHANGED IT AND NOW I THINK ITS JUST RIGHT. I ALSO LIKE TO KEEP IT IN THE FRIDGE A COUPLE OF DAYS, I LOVE EATING IT COLD.
