Ricotta Pancakes

Ingredients

  • 4 egg yolks

  • 4 egg whites

  • 1.25 cups Ricotta

  • 0.5 cup Plain Flour

  • 0.5 tablespoon Baking powder

  • 0.75 cup Milk

  • Salt

  • Butter for frying

Method

  • 1.

    Sift dry ingredients into a bowl

  • 2.

    In a separate bowl mix yolks and milk

  • 3.

    Slowly add this to dry ingredients

  • 4.

    Break up ricotta and add to the mix

  • 5.

    Whisk the egg whites in a separate bowl until stiff peaks and fold through the final mix.

  • 6.

    Heat a frying pan with some butter and pour in 1 cup of mix and place into an oven until the top start to firm up, flip over and finish over a low heat on top of the stove until golden on both sides.

  • 7.

    Serve with your choice of toppings

  • 8.

    Topping examples – mixed berries with marscapone – Grilled cinnamon banana with vanilla ice cream – caramelized apple and dates with caramel yoghurt.
