Creamy vanilla filling in a lattice biscuit base

Ingredients

  • 2 pkts Arnotts Lattice Biscuits

  • 250 grams Philly Cheese

  • 250 grams Unsalted Butter

  • 1 cup castor Sugar

  • 1 teaspoon Vanilla Extract

  • 1 dsrt spoon Gelatine dissolved in 1/4 cup hot water

Method

  • 1.

    Line a container with one layer of lattice biscuits.In a mixing bowl place the room temperature cheese and butter and castor sugar,mix until creamy,add the vanilla and gelatine mix until well mixed.Pour onto the lattice biscuits,place another layer of lattice biscuits,glazed side up,and refridgerate until set.when set,cut into portions,for a large party cut the lattice slice in halves,watch it dissappear.

add 2 passionfruit instead of lemon and only put the biscuit on the bottom of the slice, when you cut up the slice add kiwi fruit or/and strawberry on each slice.

Love this recipe. Although I did add the juice of half a lemon to the gelatine and water. Gave it a great flavour
