Penne Puttanesca

Ingredients

  • 1 tablespoon Olive Oil

  • 2 Garlic Cloves chopped fine

  • 0.5 birds eye chilli chopped fine

  • 1 tablespoon baby capers

  • 3 Anchovies torn into pieces

  • 10 kalamata olives pitted

  • 1 cup tomato sauce see my recipe

  • 2 tablespoons chopped Italian Parsley

  • Shaved Parmesan to taste

  • Cracked Black pepper

  • 200 g cooked Penne

Method

  • Ingredients:

  • 1.

    Fry off the garlic and chilli in the oil in a fry pan for 20 seconds.

  • 2.

    Add in the anchovies, capers and olives and fry for a further 20 seconds

  • 3.

    Add in the tomato sauce and heat until hot.

  • 4.

    Add in the cooked penne (hot), parsley and pepper

  • 5.

    Serve with shaved Parmesan and a sprig of parsley.
