Raspberry and Vanilla Pannacotta

James’ dessert recipe from week 3 of Come Dine With Me Australia.

Ingredients

  • 1 punnet raspberries

  • 500ml full cream

  • 2 vanilla pod

  • 4 sheets gelatine

  • ½ cup caster sugar

Method

  • Raspberry Jelly:

  • 1.

    Dissolve 2 gelatine sheets in hot water,

  • 2.

    Once cooled, add 1 Tablespoon of caster sugar and a punnet of raspberries.

  • 3.

    Stir vigorously to break up raspberries.

  • 4.

    Pour into ramekins and put in fridge to set.

  • Pannacotta:

  • 1.

    Dissolve 2 gelatine sheets in hot water.

  • 2.

    In another pot, gently simmer 4 cups of cream, vanilla scraped from vanilla pod and caster sugar.

  • 3.

    Slowly add gelatine mix, stirring constantly.

  • 4.

    Allow to cool, and then pour over the raspberry jelly.

  • 5.

    Return ramekins to fridge.

raspberries didnt set at all - followed recipe twice
