A delicious summer salad


  • 150g bag mixed salad leaves

  • 3 rashers bacon, chopped, cooked in a pan and drained

  • 100g sugar snap peas (blanched in boiling water for 1-2 minutes, refreshed in iced water, then refrigerated to crisp up)

  • 2 large vine-ripened tomatoes diced

  • ½ red onion thinly sliced

  • 12 fresh mint or parsley leaves

  • 1 avocado diced

  • Dressing:

  • ¼ cup EV olive oil

  • 2 tabs lemon juice

  • 1 teas Dijon mustard

  • 1 tab lite cream

  • ½ teas mango chutney


  • 1.

    Combine dressing ingredients in a jar and shake until combined.

  • 2.

    Assemble salad ingredients, cutting avocado at the last minute (or sprinkle with lemon juice). Add dressing, toss gently and check seasoning. Serve


Dress the salad just before serving. As with most things, the end result will only be as good as the ingredients you use. So choose the best and tastiest tomatoes, flawless greens etc. You can also prepared the sugar snaps and bacon the day before and store in the fridge
