Partially bake pastry in a muffin tray
Thinly slice 5 Spanish onions and caramelise them in butter on low heat
Add the anchovies and cook until melted.
Add fresh chopped thyme to takes and 1 teaspoon of brown sugar
Once the onion has softened add a generous slug of balsamic vinegar.
Add the onion mixture into the pastry shells and bake for 10 minutes
Drizzle lemon and olive oil on the roquette
Top with pastry shells with crumbed goats cheese and the roquette
